I’ve added an animated text to my file however the animation options drop down window does not show options.

Did you check the type of project you are creating? It is not always very clear what is not supported for HTML output, but you can always check Project, HTML Tracker.

Text animations are Falsh-based. If you are working on a responsive project, only HTML output is possible, not SWF output. That is the reason you cannot add text animations to such a project.
Try using Effects on the text.
