Preface: I’m very new to Captivate so could have missed this i suppose. But is there really no way to fully remove the outline of a shape. I’ve got it down to zero and similar color to the background but I can still see it. Is there no function in Captivate that can remove it?

No worries, the outline will disappear when published. It is just there in the editing environment.
You may also check if the option ‘Hide selection rectangles’…. is checked in Preferences. See the screenshot which I post in a second comment.
