Hello,
I am trying to build a project that has text on the left (script from a video) and the video on the right.
I can get them on the page however due to the amount of text 50% of this does not show.
How can one navigate around this issue? I noted with text entry there is a slide bar option but as I am sure you know, this has a limit on the amount of text that can be entered.
Is this possible? I recently completed a training course and I think they used Captivate and they had a two components on the slide, the text that was being read and the video.

You have the Scrolling text interaction, not sure it accepts enough characters. You apparently are not talking about a real eLearning course which means interactivity, but about a video. Why not use Closed Captioning which is possible for video. Seems a lot better learner experience, because they look like real subtitles, are synchronized with the audio in the video.
