Did you try to use a software simulation in Training or Assessment mode? It would get you already started and you’l get the capture of the Excel environment. later on you can use advanced actions and more interactive objects to improve the experience.
I have attached a screenshot of the Excel document. I’m hoping that the learner will be able to fill out several fields within the document.

Excel has a lot of functionality (have been teaching it for many years), could you give some more details please? You would need a good understanding of advanced/shared acions and variables but there are possibliities at least for simple Excel functionality. Give an example and will try to make suggestions.
