In earlier versions of Captivate, when recording a simulation it was possible to use check boxes to specify recording in several modes at once, i.e. Demo/Training/Assessment and get the three captures displayed in three different document tabs.
In 2019 the modes check boxes are now a single option drop down list in the capture settings so it seems only a single mode type can be obtained.
Is this right? Am I missing something? I’ve looked through preferences to see if I change anything.

You are confusing two totally different ‘things’! Your screenshot shows the Project Preferences, Recording modes. Here you can change the setup of those modes, but that has nothing to do with the dialog box you get when doing a recording! The dialog box which you get when starting a recording, either from the Welcome screen (Software Simulation) or from File, Record New, Software simulation looks like this screenshot. Nothing has changed since eons, not in the Preferences nor in this dialog box. You see that I have checked the three default modes, and I’ll get 3 files after recording as has always been the case since Captivate 4 at least.
Based on what you have said it appears you are trying to create a software simulation inside an existing project / or responsive layout by using insert slide > software simulation. When you do a simulation using the insert slide approach, you only get the drop down selector for type of capture.
