I would appreciate if you could explain the steps and actions required to create the many to many example you have presented.

I am struggling with how to create this type of drag and drop interaction.

I feel the same. It also depends on your creativity. You can, for example, play a film on dragging the element into a shape. The possibilities are vast,  going beyond the simple choose-and-match feature.
