I have added in my course two exercises – just as normal pages, not in a quiz!
I would like to reset the choices when clicking forward or backward, so that the user can do the exercise again, when coming back to the page. Can someone help me with that?

What do you mean when you say adding exercises, not in a quiz? Do you mean adding a knowledge check? Could you share more information about the project?
Without knowing the version and OS you are using, and how you did set up this ‘exercise’ it is impossible to answer. There is no automatic way to ‘reset’ everything. Some situations (like states, KC Drag&Drop, effects) can be reset by re-entering the slide (have a blog post about that). However objects which have been shown, need to be hidden by a ‘reset’ action. Same with other similar situations. Such a Reset action (have tons of examples on my blog) is mostly triggered by the On Enter action of the slide. Give me some more information and maybe could help you or point to one or more blog posts.
