Two issues/questions here:

1 – There are many prefab projects and templates and assets included in the new version, but how can I share my own assets or copy slides across my projects (themes, media, slides, etc.)? It seems I can only import from those provided by Adobe.

2- I can’t seem to find where my project’s assets are, so I can reuse them on new slides. I have to import them from my system each time?

I hope I am missing something, because otherwise this is quite limited.

The new Captivate (version 12) misses a very useful feature: Project Library. I am pleading since 2019 to add it to this new version, but in vain. In all previous versions such a Library stores a lot of the used assets, including the Shared actions (reusable scripts) and you could open the Library from any project in a new project. As a consultant I have created a lot of libraries for my clients. The only way to reuse an interaction in the new version is by Copy/Paste but that comes with many limitations. BTW Shared actions also allowed to avoid to have to create user variables in each new project.

As for the so-called ‘templates’, previous versions had a much more elaborate Theme which included master slides (similar to PPT master slides) where the design of templates, including eventually interactive objects with actions. Those master slides have been dropped in the new version, as have the object styles (now you really have only text styles). Example of an object style: you could create one for all quiz buttons and set it as default style.

As for the Assets Library: it has never been possible to add custom assets to that library, but managing it seems to me more easy in previous version than at this moment in the new version.
